How to make Caramelised Onion Relish
This relish will compliment most food
without overpowering it; it is sweet with a hint of mustard.
Especially good with burgers, sausages
and cold meat sandwiches.
2 – Onions (thinly sliced)
30 Gm - Butter
25 Ml - Olive Oil
2 teaspoons - Dijon Mustard
1 ½ tbsp - Muscovado Sugar
1 ½ tbsp – Capers (roughly chopped)
1 ½ - tbsp Fresh Parsley (chopped)
Salt and Freshly Ground Pepper
Heat the olive oil and butter in a pan
and add the onions, cook gently on a medium heat for 5 minutes.
Add the sugar and the mustard stirring
in as you go, stir everything together and cook on a low heat for a further 25
minutes until it is gorgeous and sticky.
After 25 minutes stir in the capers and
allow to cool.
When cooled stir in the parsley and keep
cool until serving.
