Sticky Sweet Chilli Pork Ribs

Spicy, gooey, sticky ribs..........What more could you want.
These melt in the mouth ribs are delicious hot or cold, just follow the guide below.

You will need
Sticky Sweet Chilli Pork Ribs ~ Simple Food 
500 Gm – Pork Ribs

For the sticky goo

100 Gm - Ketchup
2 – Red Chillies (de seeded and finely chopped)
2 cloves – Garlic (crushed)
2 teaspoons - Soy Sauce
1 table spoon - Muscovado Sugar
A little Olive Oil

Firstly you need to simmer the ribs in water or vegetable stock for about an hour.

You can either simmer the ribs in vegetable stock or do what I do, through the week I keep the off cuts of all the vegetables that I use so that I can make vegetable stock at the end of the week. So when making this dish I simmer the ribs in water plus all my off cuts and I end up with a great stock to keep for other uses.

The sticky goo

Heat a little olive oil in a pan and gently fry the chillies and garlic for about 5 minutes.

Mix the rest of the marinade ingredients in a bowl then pour into the pan with the chillies and garlic and simmer for about 10 minutes then allow to cool a little.

Heat your oven to 200°c then take the ribs from the stock and put them on a baking tray, coat them with the marinade and put them in the oven for 20 minutes. Take them out half way through and give them another coating.

I had mine with a baked potato, but they are just as good on their own.
