San Miguel Cod Goujons
Spanish Tapas food at it’s very best; this beautifully crisp dish served with a Smoked Paprika Garlic Mayonnaise is a winner.
You will need;
1 fillet – Cod (cut into 1 Cm wide strips)
1 – Lemon
60 Gm - Plain Flour
25 Gm – Cornflour
75 Ml – San Miguel Beer
75 Ml – Soda Water
Put the plain flour and cornflour in a bowl and blend together well, then add the San Miguel and soda water and whisk until smooth.
Leave to stand for 10 minutes and then whisk again until really smooth
Cut the cod into strips and squeeze over the juice from the lemon.
Heat up some vegetable oil to 180c for deep frying
Coat each piece of cod in flour and one at a time gently place into the hot oil.
Deep fry for about 6 minutes until cooked through.
Serve with Smoked Paprika and Garlic Mayonnaise.
100 Gm – Mayonnaise
1 – teaspoon – Smoked Paprika
2 cloves – Garlic (crushed)
Whisked together until smooth
