Patatas Bravas
This is the second in my series of Spanish Tapas, roasted potato cubes
in a beautiful spicy tomato sauce.
I have to say that I am enjoying this series so much because I get to eat this wonderful food that I love so much, I hope that you are too.
You will need;
1.5 Kg – Potatoes (peeled and cubed)
2 cloves – Garlic (crushed or finely chopped)
1 teaspoon – Hot Chilli Powder (more if you like it hot)
1 teaspoon Paprika
6 – Ripe Tomatoes (chopped)
100 Ml – Water
75 Ml – Olive Oil
15 Ml – White Wine Vinegar
Salt and Ground Black Pepper to Taste
Part boil the potatoes for about 10 minutes
Pre heat the oven to 200c, put the olive oil in a baking tray and
place in the oven to heat for 5 minutes.
Take the tray out of the oven and carefully put the potatoes in the
tray, turn them with a spoon so that they are coated with the oil, sprinkle
with a little salt and put in the oven for about 20 – 30 minutes until golden.
While the potatoes are roasting you can make the sauce.
Heat a little olive oil in a wok or large frying pan and fry the
onion and garlic for 2 or 3 minutes until softened.
Stir in the chilli powder and paprika then add the tomatoes, water and
white wine vinegar, bring to the boil and cook for about 20 minutes on a medium heat until it reduces
and you get a rich sauce.
Allow to cool a little then blend in a blender until smooth, then add
salt and freshly ground black pepper to taste.
If your potatoes are done before you have finished the sauce just keep
them warm until you are ready for them.
Put the potatoes in a dish, pour over the sauce and serve.
