Bacon Cheese and Mushroom Toasted
Breakfast Sandwich
I have to say that this is the first time
I have ever posted a sandwich on this blog but be aware, this no ordinary
sandwich.
This is a breakfast
sandwich................................My favorite breakfast sandwich.
My days are split in two; I am a
breakfast chef in the mornings and a recipe developer/food photographer in the
afternoons.
So today I thought I would stay in
breakfast mode and share with you this wonderful sandwich.
I haven’t made an ingredients list
because I think you will agree that the title is just that.
This
is how I make mine (you can easily deviate
from this to your own personal taste)
Grill 2 rashers of bacon, slice the mushrooms
and fry them in a little olive oil, if you prefer you could almost dry fry the
mushrooms because they have enough moisture within them.
When the bacon and mushrooms are cooked
put them on a chopping board and chop them both quite finely.
Arrange enough for each sandwich on a
grill tray and cover with slices of cheese (I use cheddar).
Place them under the grill with the
bread, or you could toast the bread separately in a toaster.
I only toast the bread on one side for
toasted sandwiches because I find that it adds to the squidgyness (Google is
telling me there is no such word, try this sandwich Google and I think you’ll
find that there is)
When the cheese has melted scoop the
filling up with a fish slice and put it on the un-toasted side of one slice of
bread and cover with the other.
I have Flora spread on mine also tomato
ketchup.
