Whenever I fancy a sandwich I look in the fridge and there is never
anything I fancy, so now I make sure that I have a selection of concoctions
ready to go.
This is one of them.
Tuna & Fennel Sandwich with Mayo
Time 20 minutes (not
including cooling)
You will need
1 teaspoon – Fennel Seeds (crushed)
½ teaspoon – Dried Garlic
1 teaspoon – Dried Garlic
A little Olive Oil
½ tablespoon – Plain Flour
120 Ml – Semi Skimmed Milk
A splash of White Wine
1 - 160 Gm – can of Tuna (drained)
Salt and Freshly Ground Black Pepper
Mayonnaise or Garlic Mayonnaise
Put the fennel seed in a spice grinder
or pestle and mortar just to release the flavour.
Heat a little olive oil in a pan.
Then fry off the garlic, fennel and
parsley for a couple of minutes.
Add the flour and mix to a paste.
Now add a splash of white wine and mix
to a paste, cook off the wine for a couple of minutes.
Add the milk a little at a time to make
a smooth creamy sauce.
Season well with salt and freshly ground
black pepper then simmer for about 5 minutes.
Now add the tuna and mix well.
Put into a bowl and place in the fridge
until cool.
When cooled add the mayo and more
freshly ground black pepper then mix well.
Enjoy
