If you are going to cook a special meal on Valentine’s Day you want it
to look good, taste good and you don’t want to spend all day in the kitchen.
I think a meal for two is so much more intimate if it’s a sharing meal,
a platter for two in the middle with a plate each with your accompaniments.
This is such a simple meal to create but it looks so impressive, a
great Valentine sharing meal.
Pork Loin Steak & Spinach Platter
with Chilli Apple and Mint Salsa
Serves 2 Time 30 minutes
You will need
100 Gm - Spinach
For the salsa
1 - Granny Smith Apple (peeled, cored and chopped)
1 – Red Chilli (deseeded and chopped)
1 tablespoon - Fresh Mint (finely chopped)
1 – Small Onion (minced)
100 Ml - Honey
1 tablespoon - Cider Vinegar
Start by combining the apple, chilli and onion in a bowl.
Then combine the honey, cider vinegar and mint in a separate bowl.
Now pour the mixture into the bowl of apple, chilli and onion and mix
well.
Put into a container and place in the fridge.
Pour about an inch of water in a pan put the spinach on top then add a
little grated nutmeg and a squeeze of lemon.
Cover and let it steam for 3 or 4 minutes on a medium heat.
While that’s going on season the steaks and place on a griddle or
frying pan on a medium to high heat for 4 – 5 minutes each side.
Cooking time for the steaks will vary depending on the size but don’t overcook
because you will dry them out.
Drain the spinach and plate up with the steaks.
You see I told you it was simple, just add the salsa from the fridge.
Serve with your favourite vegetables, rice or noodles.
